Creamy Tomato and Sausage Tortellini

Today I’d like to bring you one of my favoritest new recipes from none other than Taste of Home.  We received a year subscription as a wedding gift and have been loving all the yummy recipes!  But this one-by far-takes the cake.  Such creamy, cheesy, sausage-y goodness, I promise you will want to make it more than once!

Disclaimer: I am far from a food blogger, foodie, or food photographer… so bear with me as I attempt to bring you one of my favorite, easy to prepare, go-to dishes!

 Creamy Tomato and Sausage Tortellini

Begin by cooking the frozen tortellini according to package directions.  And try to not forget you have a pot of boiling water on the stove, causing billowing steam that sets off the fire alarm…. What? No, I certainly did not do that…….

When the tortellini is finished, drain and set aside while you finish the sausage and sauce.

 While your tortellini cooks, begin your sausage.  I chose to cook mine in a skillet to get that browned effect on the outside.  You will want to cook it whole instead of slicing it first because the sausage casing is kinda what holds it all together. (Of course you all already knew that, but I’m just reminding myself for next time, yes I did try to slice it first…)

After browning the sausage for about five minutes in the skillet, add some water and allow to boil for at least ten more minutes.  Once it is fully cooked (or, in my case, mostly cooked) slice the sausage and finish browning the sides.

Next, add the diced tomatoes, garlic, onion powder, and spinach.  It is so fun to watch the spinach shrink up.  You start with an overflowing skillet, and then it shrivels all up!  I would recommend breaking the spinach up into smaller pieces,  otherwise they are kind of long and stringy.

Finally, add your cream cheese and allow to melt into the mixture.  It will turn this scrumptious creamy color!  And now I know you’re getting hungry 😉

Just add the tortellini and you are finished!  Serve with warm dinner rolls and you have a gourmet meal with very little work.

Creamy Tomato and Sausage Tortellini

Serves: 6
Start to Finish: 25 minutes
Ingredients
  • 1 pkg. (19 oz) frozen cheese tortellini
  • 2 Italian sausage links
  • 1 can (14 1/2 oz) diced tomatoes, undrained
  • 1/2 tsp minced garlic
  • 1/4 tsp onion powder
  • 1 pkg. (6 oz) fresh baby spinach
  • 4 oz cream cheese
Instructions
  1. Cook tortellini according to package directions.
  2. Brown sausage in skillet, then boil for 12 minutes.
  3. Slice sausage and cook in skillet until browned
  4. Add tomatoes and spinach to sausage, cook and stir until spinach wilts
  5. Stir in cream cheese until melted
  6. Drain tortellini and add to sausage mixture, toss to combine
